Xuanwei is in the far north-eastern corner of Yunnan bordering on Guizhou Province. Here the conditions are ideal for the special breed of Golden & Black Pigs grown to produce the most delicious ham in China.
Xuanwei has been making hams famous for over 300 years. Although they are steeped in tradition, they’re looking to the future and adapting their delicious hams to appeal to the modern palate.
They still cure their hams in natural caves situated in Xuanwei, Yunnan Province, though today they are influenced by European traditions and have a modern outlook – producing hams to be served cured and raw.
